Sardine rolls

 

Hi Natty!  How are you feeling today?  It must be exciting over there in Hollywood.  How's the weather?  It's hot and dry here, but not as unbearable as it usually gets.  Maybe I'm just getting used to it.  I have a feeling you are having lots of fun there, I wish I can share your adventures but someone has to man the Eastern front.  Me.  Please keep safe and healthy, OK!

Are you hungry?  I made sardine rolls today.  I made sardine rolls for lunch a couple of days ago but I baked them, today I fried them which is much better and more photogenic.  The filling is simple, just sardines, hot sauce and dried fried shallots.  Frying the rolls makes for a crispy outside and a gooey inside.  The sauce is honey mustard sauce.  The mustard is potent like the wasabi you would use on sushi, but this mustard I used is bitter as well.  Thus the honey gives it perfect balance.  You must try my sardine rolls someday, Honey.  I think you would like them.
