Cut the sauce

 

Hi Natty!  How are you, Honey?  I'm guessing that life is comfortable for you, as I prayed it should be because you are MY girl.  Please make sure you take good care of your health and safety because you are very precious to me.  It's a low energy day for me.  I wanted to cut the grass by the side of the road, but I cut the sauce instead.  I made some hot sauce in the morning, a "go to" sauce for whatever purpose.  The video above is very clever, a very basic "sambal tumis" or hot sauce, the type I made today.  Dried chillies can be very potent.  My mother advised me to remove the seeds before hydrating them, then washing the boiled chillies until the water is colorless.  Even so, the sauce from dried chillies is too potent for my McDonald's stomach.  I had to shop around for a packaged blended chillies, and trial by error to discover one that didn't hurt my stomach.  I also added "belacan" (fermented shrimp paste) and blended tamarind.  The "belacan" had enough salt, but blended chillies need to be "cut" so the flavor isn't too sharp.  This is also true for tomato sauces.  "Cut" meaning sweetened.  I mean slightly sweetened, just enough to neutralize the tartness, not to make it sweet.  I don't have sugar in my house, so I used some honey instead.  That's it.  Aside from using blended chillies, onions, and oil, I added "belacan" and tamarind.  Oh yeah, I did that in the morning.  In the evening, I made a batch of dough instead of cutting the grass.
