Is your tummy feeling good? Are you hungry? The cooler rules the menu in my house, and today I needed to use up eggs, eggplant and rice. Also, the yard gave me 4 ripe cashews. I caught those just in time, because the birds were interested in them. So I decided to have steamed white rice with an eggplant omelet. Plus, I made a salad with fresh cashews (not the nuts), onions, red hot chilli peppers, and salt. I guess you could call it a salad, it's supposed to be a condiment to the rice and eggplant. The eggplant omelet was simple. I cubed the eggplant and fried them up until soft and greasy. Then I added 3 eggs I whipped up with some salt and poured it over the eggplant, then cooked it as an omelet as usual. It was such a simple concept, and very pure. The only seasoning was salt. I didn't expect much out of it, but the combination turned out to be perfection alhamdulillah. When you don't add a lot of salty foods and sauces to white rice, it becomes sweet. Hm, the cats were wolfing down plain white rice today for some reason.
