Hi Natty! How are you today, Honey? I hope you are feeling good and keeping safe and healthy. It's Sunday here. I'm doing OK, maybe a little drowsy.
Sorry about the 20 minute set today, folks. I had to take my mother to the dentist, then she wanted a haircut. I got done with enough time to prepare my dinner. I had a whole lot of leftovers to use up, so I decided to make fried noodles. There was a little bit of Chinese cabbage all wilted, that got chopped up. Also some carrot slices. I picked a young mango before I went in the house, I chopped that up to add sourness without vinegar. Also some of the green hot chilli peppers that Adolf chewed on yesterday. That's all the "fresh" veggies. For the fond, I began with my usual trio of chopped garlic, ginger and galangal, and fried that up in leftover oil from frying sardine rolls. I had some "garam belacan" (the stuff in the video) that had been sitting in the cooler for a few years, I put a couple of spoonfuls in there. It doesn't go bad folks, but it is very sweet. Also I added some leftover fish head curry about a week old which was on the salty side. Plus a little water, and that was the fond. I cooked that up on high heat with chunks of beef in there then added the half pack of noodles I bought a few days ago. I stirred that mix up until the water almost evaporated then put the "fresh" stuff in and turned off the heat to give it a final mix. Finish it with some dried fried shallots on top. I'll never be able to duplicate those noodles again! Too bad though, it was the best fried noodles I ever made. Alhamdulillah.
