Hi Natty!  How's your glamorous life in the tropical paradise?  I hope you are having a great time.  Don't be so worried about the antics of others, it's because you are Mrs. Rock Star inshaAllah.  You are MY girl, you are beautiful and I love you.  Are you hungry?  Do you want some fried rice?  I'll bet you have been eating a lot of fried rice.  There are a lot of bad versions of fried rice.  I like to look at fried rice as being the mastery of cooking leftovers.  The rice used for making fried rice should have been left in the fridge overnight for it to cook up perfectly.  I believe that fried rice should be light and refreshing, so it can't be bogged down with grease and sauces.  For today's fried rice, I used young kaffir lime leaves, chives, mint, garlic, onion, fish cake, and an egg.  First I sliced up the onion then fried it in oil until almost black, then I took it out.  Reducing the heat, I fried the chopped garlic and the kaffir lime leaves.  What a fragrance!  Once the garlic is brown and the leaves wilt, I put in the rice and cook it until fully separated, seasoning it with soy sauce and chicken bouillon.  Not too much seasoning!  Light and refreshing!  Then I add the egg to a hole I make in the rice, and let that cook.  Add the onions and sliced fish cake, then mix it all up.  Shut off the heat, and finally mix in the chopped chives and whole mint leaves.  Are you excited?  Are you?  Are you?  Oh sorry I didn't take a snapshot.  I was more interested in eating.  Here's a photo of Julie Andrews instead.
