Coconut cream of chicken and eggplant curry soup
Hi Natty! How are you, my love? I hope everything is going great for you, and you are enjoying your own cooking. I haven't been paying much attention to my own cooking lately. Like I once mentioned, I just want to stuff my face and move on. I am grateful that Allah granted me some knowledge of cooking. Thus, I'm going for quick and easy fixes right now.
I came across some great coconut milk the other day. It was so thick, it was almost like oobleck. But it was pure coconut milk, so awesome. I made some curry with it last night. Just simple curry: blended onions, curry powder, a small chunk of "belacan" (fermented shrimp paste), water and salted fish with the super coconut milk. It turned out so thick, and there was so much of it, that I had to freeze half of it for the next day. Which is today, so I fried up some eggplant, mixed in the leftover curry (which was almost like oobleck), then diced up some cat food (chicken breast) and dumped it in there. It ended up like super thick chicken and eggplant curry flavored chowder, which I ate with some pita bread. I think it was a success, alhamdulillah. Want some? Oh, I ate it all! Sorry, no snapshots!
