Hi Natty! How are you today, Honey? I hope you are feeling fine and having a wonderful time. Oh, I feel a bit tired right now, it's been a busy day for me. But now I look back on the day, I spent a lot of time feeding myself. The days seem like they're getting shorter.
There are a lot of bad versions of fried rice out there. My take is that fried rice should be light and refreshing. The guy in the video above seems to have a good fried rice. How bad could it be since it's only eggs and rice? I only use one egg, though. I have tried to cook the egg first in fried rice, but it turned out too heavy. Thus I seldom stray beyond the routine. But today, all I had to put in it was the stuff in the cooler. My Mom gave me a couple of salted "ikan sepat" (gourami) which had been sitting in the freezer for a couple of weeks. The gravy dish video above doesn't appeal to me, so I thought I would use it in my fried rice. I had ginger oil, so I cooked the fish in that until the fins were crispy. Then I took the fish out and fried up the garlic, then carrots, cabbage and cucumber, then threw the rice on top of all that. I used soy sauce to add color only, the real flavor is a small spoon of anchovy bouillon. I removed the large bone from the fish, then cut the fish onto strips with a scissors then into small cubes, and added that into the mix. The egg came last, I cleared a small hole in the mix then put a touch of oil in there to cook the egg. When the egg was cooked, I mixed it up one last time and voila! Light and refreshing.
