Masters of ramen

 

 Hi Natty!  How you doin' today, Honey?  I hope you are having tons of fun over there.  Looks like you have your own gang going, huh!  Hold on tight to those old friends, Darlin'.  And pray they don't become corrupt.  Please keep safe and healthy OK!

Cooking with 7 cats present is like being circled by a pack of wolves every time I step into the kitchen.  But since they're cats, then they don't team up to steal food from me: they steal from each other.  That's basic cat politics: what they want is someone else's food.  Adolf has come to the point of "steal first, inspect later", yeah just like a snatch thief.  I placed a small bag of green hot chilli peppers on the counter, and he swiped them up quickly.  When he discovered that they weren't to his taste, I got my peppers back but a few of them had bite marks.  The kittens are grown enough to jump onto the counter top.  Great.  Anna is the meekest of the kittens since that near drowning incident, but today she was really interested in my ramen.  Bon Appetit, Anna!  You should do a "Masters of Ramen" series.  Ramen bricks are as sophisticated as you get around here, but that's global right?  So even if you folks had to live on those "12 packs for a buck" ramen deals, you can still have luxury bowls of ramen.  That means, focus on the broth.  My broth today is based on the 2 chunks of salted fish I bought at the Batu Dua market on Tuesday, which I split each in half to get 4 chunks.  I slow boil a chunk of fish in filtered water while I vacuum and mop the house, along with seaweed, onion, garlic, ginger, and carrot.  When it tastes good, shut off the heat and let it cool down.  That way the scum sticks to the side of the pot, and you can just scrape it off.  I strain the broth and give the fish to the cats, first making sure the salt has cooked out.  Then bring it to a boil, and cook the noodles at the same time.  Just to soften it up a little, then I put the noodle brick in the bowl and crack an egg in there.  I finish the broth off with tofu and fish cake, then pour the whole boiling lot over the ramen brick and egg: don't break the yolk!  Top it off with dried fried shallots and hot sauce, and it's done!  The routine changes from day to day depending on how I feel and what I have but you don't have to put pig in your ramen like that guy in the video, folks!  A slice of chicken breast or roast beef would do just as well.
