Stuffed won tons

It's almost the Chinese New Year here, which means that tourist season is coming up.  People will be coming all the way from China, and it's already beginning to get congested here in this village.  Next weekend I'll have to turn up, I guess.  My Mom gave me some won ton skins, so I fried up some stuffed won tons.  This is one of my favorite foods, but the cooking is oh so tedious.  I wish I could just eat it without having to cook it, but alhamdulillah.  The ingredients for the stuffing are:
1.  fresh tofu
2.  fish balls or fish cake
3.  garlic
4.  young kaffir lime leaves
5.  black pepper
No salt!  Don't put any salt in the stuffing.  The salt should come from the dipping sauce you use, in my case today I used bottled hot sauce.  All the ingredients must be chopped up and mixed, the lime leaves can be julienned finely.  The won tons must be stuffed immediately before frying- don't stuff the won tons and let them sit overnight, or they will melt into a nasty mess.  Fry in CLEAN cooking oil, using a large spoon to spoon hot oil over the won tons so they fry evenly.
